If you want that bright yellow, creamy yolk instead of a green ring, the key is gentler cooking:

  • Don’t overboil: Once the water reaches a boil, turn off the heat and let the eggs sit covered for about 9–12 minutes, depending on size.
  • Cool them quickly: Transfer the eggs to an ice bath right after cooking. This stops the cooking process and prevents the reaction from continuing.
  • Use slightly older eggs: Fresh eggs are great, but slightly older ones tend to peel easier and cook more evenly.
