Step 1: Prepare the Beets

Wash the beets thoroughly and trim the leaves, leaving about an inch of stem attached. Place them in a large pot, cover with water, and bring to a boil. Cook until tender, about 30 to 45 minutes depending on size.

Drain and allow the beets to cool slightly before peeling. The skins should slip off easily. Slice or cube the beets according to your preference.

Step 2: Make the Pickling Brine

In a saucepan, combine the vinegar, water, sugar, salt, and optional spices. Bring the mixture to a gentle boil, stirring until the sugar dissolves completely.

Step 3: Pack the Jars

Place the prepared beets into clean glass jars. Carefully pour the hot brine over the beets, ensuring they are fully covered.

Leave a small amount of headspace at the top of each jar.

Step 4: Cool and Refrigerate

Allow the jars to cool to room temperature before sealing. Refrigerate for at least 24 hours before serving to allow the flavors to develop.

For the best taste, let the beets marinate for several days.
